Simple Pleasures





Growing up in Bihar , one vegetable that would turn up on the dinner table was the ubiquitous bhindi .
Eaten with hot chapattis , with a bowl of arhar daal on the side , it was heaven .
Easy to clean ,cut and cook and immensely tasty, bhindis played a stellar role in the kitchen recently , when my maid was on leave .
One easy dish which I repeated more than twice was this :-

Fried Bhindi

  • Bhindi - 500 grams
  • 2 medium oinons chopped fine
  • Mustard Oil
  • Half teaspoons each of cumin,coriander,turmeric and chilli powders
  • Chaat masala - 1 teaspoon

Fry the onions till pale brown and translucent and add the chopped onions . Sprinkle a little wheat flour over the lot .Add the powdered spices and toss . Cover for a bit and steam. Take off the covers and stir the vegetables till they are dry . Add the chaat masala and serve with hot off the stove chapattis .

u know this is one of the two only ways I eat bhindi... the second... full stuffed with masalas... may be will post the recipe of the same at my blog :)

oooooooh yumm!! bhindi is my fav too..specially with arhar ki daal and fulka and piping hot rice.
BTW, did you grow it yourself too,Mashi?

in fact today was planning to make bhindi anyway for dinnner..I am going to try ur recipe!

But do tell me...u said to cover and cook...I'd heard that covering bhindi while cooking makes it lacy?? Is that true?

First time here I think! And my fav veg is Bhindi. I love fried Bhindi. Never tried it with chat masala. I posted a recipe for baked okra in my blog a while back. You could try that if you like Bhindi. BTW - you use mustard oil for all your cooking? I have never tried it.
Hmm... I wish I could take some from this photo and eat it right now.

A couple of questions.

1. How much wheat flour does one use? The ingredient list doesn't have that mentioned.

2. Do you mean "Fry the onions till pale brown and translucent and add the chopped bhindi. instead of onions?

I have been craving to have bhindi for sometime now. I love the Bengali bhindi bhaja with some onions and green chili in it. I grew up in Bihar too, arhar daal, bhaat and bhindi ka bhujia was such a pet favorite. Of course with some ghee on the daal. :-)
